Taking a post-vacation PTO day was a seriously smart decision on my part. Since we had so much to do last night, I’m prepping for the week while Bunny’s at school - grocery shopping before her doctor’s appointment, meal prepping after. This week, I’m noshing:
Breakfast: Quinoa oatmeal with sauteed apples and toasted pecans
Snack: Carrot sticks and Wheatsville tamari cashew dressing
Lunch: Seitan tikka masala with sticky rice
Snack: Hummus and pita chips
And dinner is various veggies with tofu, or leftovers.
Now the only difficult part is to avoid eating all the seitan tonight…
